Hello my name is Ricardo Chavez Zubia born and raised in the great San Joaquin Valley of California. As a six year old, I and five of my other sibling would go door to door, city to city selling tamales that our family would make. While we were out selling Mom and Dad would be making more. At that time they were just $2.50 a dozen, as I recall we did that for at least five years until my oldest sister went to college and there was no replacement driver. From then on we would just make them for friends and family. Every year my brothers and I would have a contest who could eat more. I really believe I was the winner but they both claim victory. Well time went on and every year the same ole thing from early November to mid January we would make tamales. My dad would buy the raw corn and he would then cook it with (cal) lime to cook the hard skin off the corn then he would let the corn set before grinding it to make the flour , I remember him kneading this into what we called masa. He would do this for hours it wasn't ready until the masa floated. All this was done by hand. Nothing could replace the smell of the tamales cooking, you could smell it for a least a quarter of a mile, then to eat the first one of the season yuuummmmmmmmm You knew there was a god! Only he could bring this heaven to earth. So I thought as a child why only at Christmas time why can't we have them anytime our heart desired; so I decided that when I grew up I would bring them to you and your family year round not only the original red pork tamales but six other flavors Chile Verde, Chicken Picante, Chicken Mole, Chile & Cheese, Chile Colorado, last but not least the sweetest of the bunch Pineapple Raisin. HOT TAMALES TO GO is a subsidiary business of Exquisite Catering by Rick operated by Ricardo Chavez Zubia. Ricardo Chavez Zubia has over twenty years experience working in the food industry, in various cities throughout the San Joaquin Valley. His extensive experience as a chef and a caterer started at age sixteen. He worked for Tulare County Hospital learning the different diets. At age 20, Ricardo was running a family business, Mom's Cafe; from there he became the Food Service Director for a summer camp for the Developmentally Disabled; Experience also includes working at various fast food locations such as Taco Bell, Wendys, and various restaurants and hospital cafeterias. Mr. Zubia then formed Exquisite Catering by Rick in early 1990. With his passion for cooking he has catered from Los Angeles to Stockton California.
